Yep, sure. I think AutoPopStation4 lets you choose artwork to use, but if it doesn't, PSX2PSP does. Keep in mind that it doesn't find the artwork automatically, you have to find and resize/crop it yourself.

EDIT: Just thought I'd clarify. AutoPopStation4 and PSX2PSP are the apps that let you take a disk image of a PSX game disc, or a disk itself, and turn it into a PSP-readable format. So you'd need to do it all over again to get custom artwork.

(Well, that, or take apart the EBOOT.PBP with PBP Unpacker, extract the largest file (likely DATA.PSAR or DATA.PSP), then make a new EBOOT.PBP using the custom artwork and that file. It's easier to just make it again, though.)
