My PSP is still version 2.71. Someone made the LocoRoco Christmas Demo run on version 2.71. How to make other demos run?

Newer demos cannot be run, and some need decryption, etc before they can have their PARAM.SFOs hacked, to make the minimum firmware 2.71. Your best bet would be to downgrade to 1.50 then upgrade to 3.40, allowing you access to every demo with no hacking needed.

You can VERY EASILY make it runnable. Download a hex-editor ( I suggest Groovy Hex Editor ), open the eboot with it, and then search for the firmware version, usually by clicking edit>find>[Firmware here]. Then Just change it to 2.71.
