^_^
It is pretty easy to do, although it does have six steps. This works with both new demos, so feel free to get both (I did). Step One. Get Dark_AleX's Decriptor Test here. Step two. Get PDP Unpacker here.
Step three. Using unpacker, unpack all files from the eboot to a single folder (makes things easier). Copy the DATA.PSP file to the root of your psp.
Step four. Run Dark_AleX's Decriptor, and take the file it creates (DATA_OUT.PSP in the root folder), and rename it to DATA.PSP. put this somewhere you can find it. Step five. Get a hex editor (I like this one, get it from here), and open up the file you unpacked called "PARAM.SFO". Look for "2.81" or "2.82", and change it to "2.71". Save this file. Step six. Using the PDP unpacker, choose NEW, then click on the ... buttons and find each part it needs. If you do not have the file it asks for, then you don't need it. (on a side note, you can make your own icons/backgrounds... whee!). Click the SAVE option, and this is your new EBOOT.PBP! Stick it in a folder (any name) inside game, and your ready to go!

1: Open file in hex editor
2: Change the string that read "2.82" to read "2.00"
3: save to backup
4: test on PSP
...
No decrypting, depacking, repacking .. will this method work for 2.71 PSPs? Both work on my 2.80, so I dont see why not. I probably should note this will not work on a 2.5 or lower, possibly 2.6 either .. I just put 2.00 cause I felt like it, you can use whatever value you want. If i change it Id probably leave it to 2.6, for fun.

Reason: So no one flames me about 2.00 and it not working ..

^_^;;; If you want my honest opinion, I think that (based on how the intro is almost identical, as is the ending with very superficial differences) Sony went up to the guys and said "HOLY CRAP! If we don't get something out there, no one will upgrade to 2.81 or 2.82 until AFTER we launch the PS3!
MAKE SOMETHING!
^_^ So they did.
o.o and honestly, it gave me the creeps a little.
Very spooky.
So I think that the "on a working game" may happen, or they may make demos for EVERY holiday and release "LocoRoco Yearly Loco", the seasonal game that changes based on the time of year.
One can dream.
********EDIT********
The method I suggested worked for me, but I will add yours also to the tutorial I am making here. (with proper credit of course.). The benefit of doing it my way is that you can add your own icons and such along the way, but if it works who cares?

1. I fixed your name on the tutorial.
2. I uploaded both versions of the demos (set to work on 1.00 and up), and tested them: Both work on my 2.71 SE b.
Link to the tutorial is here.
