'i' means "interlaced," meaning that in the first frame, half the pixels are outputed, and in the next frame the other half are outputed. 'p' means 'progressive,' meaning that every frame has all it's pixels shown.
So, if you are looking for quality, 1080p>1080i>720p>720i>480p>480i and so on...

in like computer games.. such as eh, Half-Life 2
1080i is playing Half-Life 2 in
1920x1080 Resolution, FPS capped at 30
1080p is playing Half-Life 2 in
1920x1080 Resolution, FPS capped at 60
720p is playing Half-Life 2 in
1280x720 Resolution, FPS capped at 60
480p is playing Half-Life 2 in
720x480 Resolution in Widescreen, 640x480 in standard, FPS capped at 60
480i is playing Half-Life 2 in
720x480 Resolution in Widescreen, 640x480 in standard, FPS capped at 30.
Also you need to know, 480I, and 1080I, tricks your eye, it displays only half of the image first and then after it shows you the 2nd half, it is so fast, that you can't tell. If you focus your eye, about 4 inches top of the TV, you will see it flickering, this will not happen with LCD screens (any mode), or TV's that support Higher Resolutions than 480i, such as 720p or 480p.
480p, 720p, 1080p, you can think them as low-res computer monitors. 480p = 640/720x480, 720p = 1280x720, 1080p = 1920x1080.
:-)

What you also forgot the mention is that even though the fps for 'p' is only 30, they are "fuller" screens, meaning that each frame has every pixel defined. I pick up on the filicker on my grandma's HD tv (CRT, not LCD), and it really bugs the heck out of me. My eyes hurt after about 5 minutes. It happends on my friend's old CRT too, so I know it's not just that one screen.

and I can tell the difference 30fps and 60fps... but thats just me paranoid of the perfect video
1080i has fillers... scanlines, on plasma/crt. but most LCD tv's have a deinterlacer in them, preventing any flickers
if u have a 1920x1080 screen, 1920x1080i still will look better than 720p rendering/showing every single pixel, but if you are viewing 1080i source from a 1280x720 screen, it will look no better than 720p. 1080p however, will have the richest color, and the smoothest framerate, but again, this is all in a 1920x1080 screen.
and it is true that 480p/720p/1080p all as 60fps.. atleast to my knowledge
